325g flour
75g melted butter
water to form a dough
Filling – 150g cooked green lentils
Half tsp each turmeric, chilli powder, cumin, ginger
Tsp each, coriander, fennel seeds, mango powder
Method
- Bread – mix the flour and butter, add enough water to form a dough. Cover and rest 30mins
- Kneed and roll into a log. Cut into 10, then press out into circles
- Filling – pulse everything to form a semi coarse paste
- Spoon small amounts into the center of each circle
- Pull up to form a ‘purse’. Turnover and flatten
- Shallow fry on med heat for 5-6mins each side
- Serve with yoghurt, mint and nigella seeds
