Stuffed Kachori

Ingredients

325g flour
75g melted butter
water to form a dough

Filling – 150g cooked green lentils
Half tsp each turmeric, chilli powder, cumin, ginger
Tsp each, coriander, fennel seeds, mango powder

Method
  1. Bread – mix the flour and butter, add enough water to form a dough. Cover and rest 30mins
  2. Kneed and roll into a log. Cut into 10, then press out into circles
  3. Filling – pulse everything to form a semi coarse paste
  4. Spoon small amounts into the center of each circle
  5. Pull up to form a ‘purse’. Turnover and flatten
  6. Shallow fry on med heat for 5-6mins each side
  7. Serve with yoghurt, mint and nigella seeds
