Marinade time – 2 hours
500g cod, cut into 25-30mm cubes
Half thinly sliced red onion
Half cucumber, deseeded and cut into small cubes
Marinade – 3 green chillies
2 cloves garlic
Half bunch mint
30ml veg oil
Juice n zest 3 limes
Tbs fish sauce
Small dark malty rye loaf cut into small rectangles
100g butter whipped with 2 salted anchovies
- To make the marinade – add 3 green chillies, 2 cloves garlic, a bunch of coriander, Half bunch mint, 30ml vegetable oil, the juice and zest of 3 limes, 1tbs fish sauce and 150ml water. Blend until smooth and a pinch each of salt and pepper.
- With 500g cod, cut into 25-30mm cubes put this in the marinade along with half a thinly sliced red onion and half a cucumber, deseeded and cut into small cubes. Leave for 2 hours.
- With a small dark malty rye loaf cut into small rectangles.
- Whip together 100g of butter with 2-4 salted anchovies.
Toast the rye, spread the whipped butter on very thinly. Spoon on the marinated cod, or use the toast to dip into the sauce and spoon fish on
