CHILLI PRAWNS WITH MANGO RAITA

Ingredients

 

450g raw king prawns, peeled, de veined, tail left on

2tsp turmeric

4tsp hot chilli powder

Juice half lemon

25mm piece ginger, matchsticks

 

6 curry leaves

4 sp onions, chopped

50g coconut flakes

2 sliced red chillies

 

Raita – 200g yoghurt

75ml mango puree

Tbs honey

About 20 mint leaves, finely chopped

 

Method

  1. Mix 12 raw peeled and de veined king prawns, tail left on with 2tsp turmeric, 4tsp hot chilli powder and the juice of half a lemon.
  2. Stir fry 25mm match sticked piece of ginger, 6 curry leaves, 2 sliced red chillies and 4 spring onions, chopped for 2-3 minutes.
  3. Add the marinated prawns. Cook for 3 minutes.
  4. Add the 50g coconut flakes.
  5. For the raita – simply mix together 200g yoghurt, 75ml mango puree, 1tbs honey and about 20 mint leaves, finely chopped. Serve to dip the prawns in.
