200g pistachios
100g walnuts
12 slices crispy grilled bacon, crumbled
zest 3 limes
75g sugar
pinch ground cardamom
400g filo pastry
225g melted butter
honey syrup –
175g honey
125g sugar
juice of the limes
2 tbsp orange blossom water
250ml water
Method
- Put the nuts, zest, sugar, cardamom, into a processor and pulse to form rough crumbs
- Grease and line a 22cm square baking dish. Cut filo to the size of the dish, butter and layer 6 sheets into the dish
- Add a third of nut mix and bacon, repeat, finishing with pastry(press down each layer as you go)
- Bake at 180c for an hour
- Make the syrup by boiling all together for 5mins
- As the baklava comes out of the oven pour the hot syrup over. Cool again and serve
